The wine making estate
The wine making estate covers a area of approximately 370 hectares in a region which is highly commended for vineyards, in the Commune of Gaiole in Chianti, on the border with the Commune of Radda . The vineyards belonging to this estate are situated in the heart of the Chianti Classico DOCG region.The vines are grown using spurred cordons with a density of 5,000 per hectar.
The vines grow at an altitude varying between 300 and 500 meters above sea level.
The terrain is characterized by a high stony content and steep scope (15 – 20 %) and these natural characteristics increase the draining properties.
The favourable climate is dry in the summer whilst the month of September has a sharp and contrasting temperature range between day and night.
Thanks to such favourable climatic and environmental conditions it is possible to produce high quality full bodied wines and excellent extra virgin DOP olive oil.
The olive grove has over 3,500 Frantoio, Moraiolo and Leccino plants.
The olive picking is done stricly by hand during the months of November and December; the olive pressing (which is cold pressing without oxygen) is done daily in the Vertine Oil Mill, which is only 150 meters from the estate, which offers olive pressing rigourisly complying with D.O.P. extra virgin olive oil production code.
Our vineyards produce a “Disciplinary” Chianti Classico “IGT Toscana” and a Chianti Classico Vin Santo (see table).
The winery
The newly built winery is equipped with the latest technologies available on the market today and can therefore be considered as one of the best technical cellars in operation at present in the Chianti Classico region.
The wine ageing area, over approximately 650 square meters, is completely below ground level and is only accessible from inside the winery. The cross vaulted ceiling is particularly appealing.
